The eggshell floated to the top of the water and the yolk sank to the bottom. The shell was broken open and the contents poured into a bowl. The yolk was separated from the white by passing it through a sieve. The white was then beaten until stiff peaks formed. The yolk was added to the white and beaten again. Sugar was gradually added while beating continued. The mixture was poured into a baking dish and baked in a moderate oven for about 30 minutes. When done, the cake should be golden brown on top and springy to the touch. It is best served warm with whipped cream or ice cream.
